I made these whimsy protein pancakes on a slow morning and honestly could not stop staring at them before I ate them. Fluffy little stacks, a dollop of creamy greek yogurt on top, rainbow sprinkles, and the most adorable heart shaped strawberries on the side. They looked like something out of a fairytale breakfast and they had 40 grams of protein. That is the dream.

Whimsy Protein Pancake Recipe
Ingredients
For the pancakes:
- 2 large eggs
- 2 scoops protein powder
- 1 tsp baking powder
- 2 to 3 tbsp milk of choice
For the toppings:
- Greek yogurt
- Fresh strawberries
- Rainbow sprinkles
Instructions
- Whisk your eggs in a mixing bowl until well combined.
- Add the protein powder and baking powder to the eggs and stir together.
- Add your milk one tablespoon at a time until you reach a smooth, pourable batter. You are looking for a consistency similar to regular pancake batter, not too thick and not too runny. Two to three tablespoons is usually the sweet spot.
- Heat a non-stick pan over medium low heat and lightly grease it with a little cooking spray or butter.
- Pour small rounds of batter onto the pan, about two to three tablespoons per pancake. Cook until you see bubbles forming on the surface, around two minutes, then flip and cook for another one to two minutes.
- Stack your pancakes, add a generous spoonful of greek yogurt on top, arrange your strawberries on the side, and finish with a handful of sprinkles.
Recipe Notes
This recipe makes 5 to 6 pancakes.
Approximately 300 calories and 33g of protein per batch. Exact macros will depend on the protein powder you use, so always check your specific product for accurate calorie, carb, fat, and protein numbers.
For the heart shaped strawberries, simply slice the strawberry in half lengthwise and then cut a small V notch at the top of each half. So cute and so easy.
Cook on medium low rather than high heat to avoid burning the outside before the inside is cooked through. Protein pancakes can brown quickly.
These are best eaten fresh but you can store leftovers in an airtight container in the fridge for up to two days.
How to Make the Toppings Extra Whimsy
The toppings are honestly half the fun. Here is how I styled mine:
Greek yogurt: Use a spoon to dollop it right on top of the stack so it sits nice and fluffy. Full fat greek yogurt gives you the creamiest result.
Heart shaped strawberries: This little trick makes the plate look so much more intentional and it takes about thirty extra seconds. Totally worth it.
Rainbow sprinkles: A small pinch is all you need. They catch the light in the cutest way and make the whole thing feel celebratory.
You can also add a drizzle of honey or maple syrup if you want a little extra sweetness, though with the greek yogurt and fresh fruit you honestly might not need it.
